Processing is carried out using the traditional Japanese Ike-Jime technique – a particularly gentle method that kills the fish stress-free and preserves the quality of the meat. A unique traceability system ensures absolute transparency: each fish can be traced via an individual QR code all the way back to its catch date, weight, fat content, and sustainability certificate.
