Smoked matjes

This Matjes is made from young herring before its first sexual maturity and is then mildly smoked after processing. The fillets are carefully sorted and placed in a 3-litre container, ensuring consistent quality and a distinct structure. The flesh exhibits a light to rosy colour with a subtle smoky tone, a delicate, finely textured consistency, and a mild smoky aroma that does not overpower the Matjes character. The fillets remain dimensionally stable and can be portioned cleanly.
