The ÍSLAND FISKUR cod loin fillets are among the noblest and most valuable cuts of Icelandic cod. The fish are caught by Icelandic day boats, which operate under strictly regulated quotas and use particularly gentle line-fishing methods. This means each cod is brought on board uninjured, clean, and in perfect condition – the basis for premium quality that makes Iceland unique in the European market. The catch is almost entirely MSC-certified and represents sustainable, responsible fishing.
After landing, the cod is traded the same day at the Icelandic auction and then traditionally hand-processed in small, family-run filleting businesses. The back loins are precisely cut from the premium central piece of the fillet, carefully trimmed and cut without skin. The result is immaculate, compact, absolutely high-quality loins for professional kitchens that rely on maximum yield and the highest product consistency. Immediately afterwards, the goods are transported via Keflavík Airport by direct flight to Germany.
