This cuttlefish comes from Les Viviers de Noirmoutier in Saint-Gilles-Croix-de-Vie in the Vendée region. The company buys daily at the local fish auction („Criée“) and exclusively selects produce from day-boat fishing, where small coastal boats land their catch the same day. The flesh has a resilient, clear structure and a mild, clean aroma. Cuttlefish is suitable for rings, strips, tube preparations, roasting or braising.
