Saw-wrack

This seaweed is harvested fresh daily from the Oosterschelde and supplied in a 1kg net. It is characterised by its jagged, robust leaves and a firm, slightly crisp texture. The dark green to brownish-green colour largely remains even after cooking.

The taste is mild, clearly maritime, and has a distinct mineral note as well as a pleasant umami component. Seaweed is suitable for both raw and briefly cooked applications, while remaining dimensionally stable.

Ideal for salads, warm vegetable side dishes, stir-fries, fish combinations, bowls, soups, or as an aromatic addition to modern seafood cuisine. The fresh harvest ensures a natural flavour and high-quality, immediately processable leafy greens.
