Sample Box Trio

This selection comes from the oyster farms of Huîtres Hervé on the French Atlantic coast, where the oysters are raised in traditional clarification ponds and cared for according to their varieties. The Sample Box Trio presents three different lines from the house and serves as a compact introduction to its characteristic „pearls“.

The oysters are carefully sorted, classified by meat content and assembled as a trio. „Ronce“ stands for a clear, balanced taste with typical marine minerality. „Royale“ has a higher meat content and a more robust expression. „BB Boudeuse“ is a particularly dense, aromatic line with a precise texture.

The meat from the three varieties displays varying intensities depending on the origin basin, yet consistently exhibits a clean structure and a harmonious balance between minerality, sweetness, and a delicate saltiness.

The box is suitable for direct raw consumption, for tastings, or as a sample introduction to the three profile directions of Huîtres Hervé. The combination allows for a clear comparison of texture, meatiness, and flavour profile between the three varieties and serves as a compact sample unit.
