ÍSLAND FISKUR Haddock belongs to the distinctive white noble fish of the North Atlantic and, in its kitchen-ready size of 1.5 kg or more, offers a quality that is hard to surpass in the European market. It is caught by Icelandic day boats, which adhere to strictly regulated quotas and employ particularly gentle line-fishing methods. This ensures that each haddock reaches the harbour unharmed, clean, and in perfect condition – an ideal basis for truly top-quality produce. Almost the entire catch is MSC-certified and represents sustainable, responsible fishing. After landing, the haddock is traded at the Icelandic auction on the same day and subsequently carefully gutted by hand and prepared for the kitchen in small, family-run businesses. In this form, it offers the highest yield, perfect freshness, and maximum reliability for professional kitchens and counters. Immediately afterwards, the produce is shipped directly to Germany via Keflavík Airport as part of a direct flight. Without intermediate storage or detours, the haddock reaches the customer in approximately 48 hours – fresher, cleaner, and sensorially purer than almost any standard produce. The haddock itself has snow-white, fine-fleshed, and elegant meat with a typical Icelandic, clear aroma.
