Venus clam

These ridged wedge clams are wild-caught from the clear, sandy coastal waters of the Mediterranean. The clams are characterised by their smooth, matt brown-orange striped shell and well-developed flesh.

The meat has a firm, fine-grained structure and a mild, maritime aroma with a distinctly nutty, slightly sweet flavour. Consistent quality is maintained through targeted selection and careful processing.

The mussels are suitable for a variety of uses: raw with a splash of lemon, steamed in white wine broth, briefly blanched or grilled – also as an elegant starter or a component of cold or warm delicatessen creations.
