The plaice is caught by Icelandic day boats, which adhere to strictly regulated quotas and employ particularly gentle fishing methods. This ensures that each fish arrives at port in pristine condition, forming the basis for fillets of this exceptional quality. The catch is almost entirely MSC-certified and represents genuine, responsible sustainability. Following the auction, the plaice is processed by hand in small, family-run filleting businesses. The fillets are cleanly removed from the fish, precisely trimmed, and cut with the skin on. The skin preserves the structure, provides excellent frying characteristics, and enhances the delicate, mildly sweet aroma of these exquisite plaice fillets. Immediately after, the product is flown directly to Germany via Keflavík. Within 48 hours, the product is with the customer – fresher and sensorially clearer than the usual market standard.
