These North Sea prawns are wild-caught in the coastal areas of the North Sea and are traditionally cooked on board immediately after being caught. The prawns are left whole in their shells and offered unpeeled, thereby preserving the natural structure and original state of the raw product. The shells have a grey-brown to reddish colour, typical of cooked North Sea prawns. The meat inside has a light, finely structured texture and a mild, nutty aroma. Cooking them immediately after capture keeps the meat structure stable and its characteristic aroma undiminished. This product is suitable for applications where the prawns are to be peeled by hand fresh – for example, for prawn sandwiches, salads, or hot preparations where an unaltered raw structure is required. The whole prawn allows for individual yield and precise processing depending on the desired portion size. Packaging in unpeeled form ensures longer stability of the meat and offers a traditional product form, as is customary in North Sea prawn processing.
