This Irish moss originates from the Dutch Oosterschelde, where it is harvested as a fresh red algae. Harvesting takes place in the coastal area at optimal water levels, ensuring the algae are supplied in their original state with a clearly recognisable leaf structure. After harvesting, they are washed, sorted, and packaged fresh, without drying or further processing.
The algae have a natural reddish-brown to slightly violet colour with a clear, fibre-rich leaf structure. The texture is fresh, elastic and slightly crisp, with a subtle maritime aroma and a fine, natural iodine note. Fresh processing keeps the surface smooth and the structure dimensionally stable.
The product is suitable for cold and warm applications, for salads, as an accompaniment to fish dishes or as a natural component in vegetarian preparations. When heated, the algae can have a slightly gelling effect and is therefore also suitable as a binding agent in recipes.
