ÍSLAND FISKUR Haddock Loins are among the noblest and most valuable cuts of haddock – a product that enjoys the highest regard in Iceland. The fish are caught by Icelandic day boats, which adhere to strictly regulated quotas and use particularly gentle line-fishing methods. This ensures that every haddock reaches the harbour undamaged, clean, and in perfect condition. The catch is almost entirely MSC-certified and represents responsible, sustainable fishing. After being caught, the haddock are auctioned on the same day and then carefully hand-processed in small, family-run manufactories. The loins are precisely cut from the best middle section of the fillet, left with skin on, and trimmed to the premium size of 150g+. These cuts offer exceptional texture, perfect searing properties, and the highest product consistency – ideal for top gastronomic quality. Directly after processing, the goods are flown directly to Germany via Keflavík. Within approximately 48 hours, the loins are with the customer – fresher, clearer, and sensorially purer than almost anything else available on the market. The haddock itself is characterised by its snow-white, finely fibrous flesh, which possesses an elegant, clean aroma. The loins have a particularly firm, high-quality texture and are ideal for sophisticated preparations where perfect consistency and a pure flavour profile are required.
