This green sea-lettuce (Codium) is sourced from the clean, nutrient-rich Oosterschelde and is harvested fresh daily. The sea-lettuce is supplied in 1 kg nets and is characterised by its typical forked shape, a juicy, slightly elastic texture and a vibrant green colour. The fresh harvest ensures a clear aroma and particularly high product quality. Codium has a mild, purely maritime flavour with a subtle iodine note and a pleasant, delicately meaty structure. The sea-lettuce holds its shape when plated and is suitable for both raw and cooked applications.
