ÍSLAND FISKUR Cod Tails are among the particularly fine and versatile cuts of Icelandic cod. The fish are caught by Icelandic day boats, which are subject to strictly regulated quotas and use particularly gentle line-fishing methods. This ensures that each cod reaches the harbour uninjured, clean, and in perfect condition – a fundamental requirement for premium quality at the highest level. The catch is almost entirely MSC-certified and stands for sustainable, responsible fishing. After landing, the product goes to the Icelandic auction on the same day and is then traditionally processed by hand in small, family-run businesses. The tails – the rear, slender, and very tender part of the fillet – are precisely trimmed, cut completely without skin, and prepared cleanly. This makes them perfectly suited for professional kitchens that require flexible, high-quality, and consistent portions. Immediately after processing, the product is shipped to Germany via direct flight from Keflavík Airport. Without intermediate storage and without detours, the cod tails reach their destinations after approximately 48 hours – with a freshness that is virtually unmatched in the market. The cod itself is one of the finest white cold-water fish of the North Atlantic. The tails are characterised by their snow-white, firm yet tender flesh, with a mild, clear flavour and a fine structure that holds up perfectly during cooking. They are ideal for frying, steaming, or for modern, light dishes.
