Scallop terrine

This terrine is made from comminuted scallop pulp, bound with mild spices and cooked in a block. The 840g unit has a uniform slice pattern along its entire length. The texture is fine and compact, the colour a pale cream with slightly rosy nuances. The aroma is mild and clearly scallop-based. The terrine is suitable for cold sliced portions, platters or arrangements where a defined structure is required.
