Vintage sardines

These vintage sardines from Cossias Joulin come from traditional coastal fishing and are carefully processed directly after being caught. The fish are gutted by hand, preserved in high-quality oil, and then gently matured in the tin. The annual bottling creates a clearly defined vintage with a stable origin and consistent quality level. The sardines have firm, silvery, shiny flesh with a fine, juicy texture and a balanced, mild aroma that further harmonises through the maturation time in the tin. The texture becomes softer and more uniform with increasing storage time, without losing its shape. The vintage sardines are suitable for direct consumption from the tin, for cold platters, as a delicatessen component, or as part of high-quality starters. Maturation develops a full-bodied flavour, typical of long-aged sardines.
